Taco Tortellini Skillet Meal

Taco Tortellini Skillet  Meal
Cook's Notes: A one pot meal that's sure to be a new family favorite.  A no fuss supper easy to put together packed with lots of your favorite Mexican flavors.
Recipe adapted from mixandmatchmama.com   and serves 4-6.
Ingredients:
  • 1 lb. ground beef or Italian sausage
  • 1 cup sweet onions, diced
  • 1 cup mini sweet peppers combination red,yellow, orange
  • 1 can  diced tomatoes
  • 1 pouch of taco skillet sauce 
  • 1 jar of Black Bean and Corn Salsa (you will need 2 cups) or use regular salsa and add in 1 cup frozen corn and 1 cup black beans, rinsed and drained   
  • 1 TB. chili powder
  • 1 tsp. Italian seasoning
  • 1/2 tsp. espresso powder
  • 1 (10 oz.) package of refrigerated 3 cheese ravioli
  • 1-1/2 cups shredded cheddar cheese, divided 
Directions:
  • Cook ground beef or Italian sausage, crumble and drain. Set aside. Wipe pan clean.
  • Saute onions and peppers. Add in cooked meat, diced tomatoes, skillet sauce, salsa, chili powder, Italian seasoning and espresso powder. Mix well and cook uncovered medium low heat 10 minutes. Add in ravioli and 1 cup shredded cheese. Cover and reduce heat to low and simmer 15 minutes. Add in rest of cheese and stir until it melts.
