It was just that kind of a beautiful fall day perfect for serving up a scoop of apple crisp with ice cream and drizzled with caramel.

Apple Crisp with a Caramel Drizzle
Apples tossed with brown sugar and cinnamon drizzled with a caramel sauce and topped with a crunchy crumb topping. It makes for a delectable Caramel Apple Crisp. A caramel twist on the traditional fall favorite is decadent BUT well worth the splurge! My, oh my!

Apple Filling Ingredients:
- 10 cups peeled, cored, and sliced Granny Smith Apples (about 6-7 large apples)
- ¼ cup granulated sugar
- ¼ cup packed light brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon Saigon cinnamon or 2 teaspoons ground cinnamon
For the Caramel
- Use a prepared jar of salted caramel sauce (ice cream topping)
- 1 cup all-purpose flour
- ¾ cup packed brown sugar (light or dark)
- ¼ teaspoon salt
- 1 tablespoon Saigon cinnamon or 2 teaspoons ground cinnamon
- 1 cup old-fashioned rolled oats
- 6 tablespoons melted butter
- 3/4-1 cup of chopped nuts
Directions:
- Preheat oven to 350 degrees. Grease a 9 x 9-inch baking dish or one that is a similar size.
- Peel and dice apples.
- Prepare the apple filling: In a medium bowl, stir together the granulated sugar, brown sugar, flour, and cinnamon. Sprinkle mixture over the apples and toss to coat.
- Drizzle 1/3 cup of caramel sauce over the apples.
- Prepare the topping: In a large bowl, combine all-purpose flour, brown sugar, salt, cinnamon, nuts, and rolled oats. Stir in melted butter until evenly incorporated. Use your fingers to crumble the topping and refrigerate the topping for 30 minutes. Then recrumble the topping and sprinkle the mixture evenly over the apples. Bake in preheated oven for 45 minutes or until apples are bubbling.
- Serve crisp warm with a drizzle of caramel sauce over each serving with a scoop of vanilla bean ice cream.
