Add some pizazz to your breakfast or brunch with Salmon Avocado Toast. Salmon is low in saturated fats and is a good source of protein. Eggs are an efficient rich source of protein and vitamins. Avocados contain high levels of healthy beneficial fats.
It all started with this delicious breakfast I had at a restaurant in the cities with a menu item called Avocado Toast. It was caraway rye toast heaped with mashed avocado, tomatoes, pieces of mozzarella, sunflower seeds, and chopped salmon. It was then topped with a drizzle of dark balsamic vinegar.
Thinking this dish could be easily recreated I moved ahead to create my own Ever Ready special Salmon Avocado Toast with Egg. I will say in my haste to serve it warm, I did forget the drizzle of balsamic vinegar. It's a filling dish that will leave you satisfied for many hours and its absolutely delicious. I had leftover grilled salmon from another meal though pieces of smoked salmon would work too. Ingredients:
- Whole wheat toast
- Mashed avocado
- Diced tomatoes
- Sunflower seeds
- Mozzarella cubes
- Fried egg
- Balsamic vinegar
Directions:
Cooking Tip: Have all ingredients out on the counter ready for quick assembly.
- Fry an egg on low heat.
- Toast the bread and halve it diagonally.
- Assemble the toast-avocado mash, diced tomatoes, salmon pieces, sunflower seeds, cheese, fried egg
- Sprinkle dill and cracked black pepper on top of the egg. Drizzle with balsamic vinegar.
