Cook's Notes: One of the best things about this time of the year is the abundance of seasonal squash. It's full of vitamins A and C. Even if you aren't a fan of squash I guarantee this vegan dish will win you over with its amazing fragrance and quite a delicious combination of maple, cinnamon, and rosemary. I almost forgot to photo the squash dish until we were halfway through the bowl! It was that good.
It's a great side for any fall meal or BBQ. Note squash cubes shrink during roasting time.

Maple Bacon Wrapped Carrots
Ingredients:
- 1 large butternut squash, peeled and diced about 6-8 cups 1-1/2 inch cubes
- 2 tablespoons each of olive oil, maple syrup, and brown sugar
- 1/4 teaspoon salt
- 1 teaspoon Saigon cinnamon
- Dash of nutmeg
- 1 teaspoon crushed Rosemary leaves
- 3/4 - 1 cup pecans
- Optional pinches of cayenne pepper
- Garnish sprigs of Rosemary
- Preheat the baking oven to 400 degrees. Line a baking sheet with a silicone pad or parchment paper.
- In a large bowl add olive oil, syrup, brown sugar, salt, rosemary, and cayenne pepper if using. Add in butternut squash cubes and mix well.
- Spread the mixture evenly out on a baking sheet. Roast for 15 minutes. remove from oven add pecans and stir the mixture to coat pecans.
- Roast an additional 5 minutes or until squash is tender.
- Serve warm and garnish with rosemary sprigs or parsley.

Pumpkin Spice Cake with Maple Cream Frosting
What a gift to get that homemade maple syrup from Mike. Our nephew, who lives outside Faribault, also makes maple syrup so we get some from him.
