Cooking Tip: Add an extra topping crunch and sparkle by mixing a little cinnamon with white sparkling sugar. This jar was purchased at Michaels in the baking section. A good substitute is cinnamon mixed with granulated sugar,
Ingredients:
- 1-1/2 cups all-purpose flour
- 1/2 cup packed light or dark brown sugar
- 1 -1/2 tsp. baking powder
- 1 tsp. Saigon cinnamon
- 1/4 tsp. salt
- 1 large egg
- 1/2 cup pure maple syrup (not pancake syrup)
- 1/2 cup milk or half and half
- 1/4 cup butter, melted and slightly cooled
- 1 cup chopped nuts
- Cinnamon sugar garnish
- Preheat oven to 400°. Line 9 standard muffin cups with paper liners.
- In a large mixing bowl, stir together flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, lightly beat egg with a whisk. Add maple syrup, milk or half and half and melted butter. Stir to combine.
- Add liquid ingredients to dry ingredients. Stir just until combined. Stir in nuts.
- Divide dough evenly among muffin cups filling about 3/4 full. Sprinkle each muffin with cinnamon sugar mixture.
- Bake 18 minutes or until a pick inserted into the center of a muffin comes out clean.
- Cool in pans for 10 minutes before serving.
