All Things Maple: Part Two

Every leaf speaks bliss to me, fluttering from the autumn tree.
Emily Bronte
After our neighbor Mike retired in 2014 he made his long time dream a reality, producing maple syrup. I can tell you first hand once you've had Mike's 100% maple syrup you'll never want to go back to a grocery store brand again. Since it's quite a labor intensive operation  one jar really is what we call liquid gold

You need to know... The general rule of thumb is that it takes 40 parts maple sap to produce 1 part maple syrup. This translates into 40 gallons of sap to produce 1 gallon or syrup (or 10 gallons of sap for one quart of syrup). So when we get a jar of his syrup in April we make sure not to waste a drop.

Here are some Ever Ready Specials sweetened with Mike's Maple Syrup.
Apple Salad with Maple Vinaigrette
Pork Chops and Maple Pear Salad
Maple Bacon Roasted Carrots\
Dijon Maple Sauced Green Beans
Maple Roasted Acorn Squash
Mashed Maple Sweet Potatoes
Pumpkin Spice Cake with Maple Cream Cheese Frosting
Roasted Butternut Squash and Bacon Salad with Maple Rosemary Vinaigrette
Maple Cinnamon Roasted Butternut Squash
Thank You Mike for providing the Readys with maple syrup each year. The liquid gold inspires my cooking.
