Creamy Tuscan Garlic Salmon
This is an easy 30-minute restaurant-quality meal to make and company-worthy. The salmon can either be pan-seared or grilled and then added to this amazing creamy Parmesan sauce with spinach and sun-dried tomatoes. Chicken is another substitution for salmon. Serve the dish with a green salad.
The recipe is adapted from recipecritic.com and serves 4.
Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- 3 garlic cloves minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon of each Italian seasoning and parsley flakes
- 1 cup Parmesan cheese
- 1 tablespoon cornstarch
- 1-2 cups spinach chopped
- 3/4 cup sun-dried tomatoes, drained and diced
- 1/4 cup dry white wine
- Dash red pepper flakes
Pan Sear
- Add oil to a large skillet, and salt and pepper your salmon. Pan sear the salmon by placing skin side down and turn to medium-low heat.
- Let it cook for about 7 minutes and then flip the salmon over and cook for an additional 3 minutes until it is barely pink in the center but flaky. Set aside on a plate tented with foil to keep warm.
- Place salmon on foil. Squeeze lemon juice over salmon and then add 1/2 teaspoon butter to each piece.
- Grill for 7 minutes, flip over and cook until the salmon is flaky.
Sauce
- If seared salmon, wipe the pan free of grease. Add 1 tablespoon of butter and minced garlic. Sauté for 2 minutes. Add in heavy cream, chicken broth, spices, and Parmesan cheese.
- Whisk in the cornstarch and let the sauce simmer for 1-2 minutes. Add spinach, sun-dried tomatoes and wine simmering uncovered until the spinach starts to wilt.
- Add the cooked salmon back to the pan, and stir in red pepper flakes. Add more Parmesan cheese if needed.
