Cranberry White Chocolate Cookies with Pistachios

Cook's Notes: You’ll love these white chocolate chip, cranberry cookies because they’re soft-baked, wonderfully chewy, and have extra vanilla. The combination of creamy white chocolate morsels with tart dried cranberries are a classic pairing, perfect for a holiday cookie tray. The recipe makes two dozen cookies. 
Ingredients: 
  • 2 sticks of softened butter 
  • 2 cups of sugar 
  • 2 eggs 
  • 2 teaspoons vanilla 
  • 2-1/4 cups flour 
  • 1 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 2 cups white chocolate chips 
  • 1 cup dried cranberries or cherries 
  • 1 cup chopped pistachios or walnuts 
Directions:
  • Line a baking sheet with parchment paper. 
  • Beat butter and sugar until creamy and fluffy. 
  • Add in eggs and vanilla, and beat until smooth. 
  • In a separate bowl sift flour, salt, and baking soda together. 
  • Beat flour mixture into egg mixture, stir in chips, cranberries/cherries, and nuts. 
  • Chill dough in the refrigerator for one hour. 
  • Preheat the oven to 375 degrees. 
  • Drop dough by round tablespoon on the baking sheet. Flour hands and roll each tablespoon of dough into a ball. Bake for 10-11 minutes. 
  • Cool cookies on a wire rack.
