Books

The photo was taken in Walker, MN. The stone sculpture shows two children sharing  a book on a park bench. It inspired me to think about all the wonderful books we have to chose from as  we get lost in our reading. 
Picking a book quote is much like picking a favorite book. Its hard to chose just one.

Cook's notes: This pie is so easy to put together. Its refreshing taste is  the perfect way to beat the heat.


Lemonade Ice Cream Pie

Ingredients:

• 1 can (6 oz.) slightly thawed lemonade concentrate
• 4 cups vanilla ice cream softened
• 1 small tub of whipped topping like Cool Whip
• graham crackers or vanilla wafers or gingersnap cookies for crust

Directions:

• Beat lemonade till smooth,
• Add ice cream a cup at a time beat till smooth
• Stir in whipped topping
• Spoon into prepared crust that had been refrigerated about 30 minutes

Crust

• Add ½ cup crushed almonds, 1/4 cup sugar and ½ tsp. cinnamon to crushed 1-1/2 graham cracker crumbs or crushed vanilla wafer crumbs or crushed gingersnap cookies (use a Cuisenaire)
• Add 5 TB. melted butter and blend well
• Pat crumb mixture into pie plate-cook 375 about 7 min.
• Cool and then chill 30 minutes before adding filling
• Freeze and remove pie 15 minutes before serving
• Optional adding lemon slices or grated lemon zest on top
