that there are only 9 more days till Spring (March 21)? It seems like the Midwest and many other parts of the US are still blanketed under snow and ice. Maybe they need a bit of luck to turn things around. Perhaps a plate of shamrock cookies might just help ease the pain.
Shamrock Sugar Cookies
Ingredients:
- 1 cup of butter softened
- 1cup of sugar
- 1 tsp. vanilla
- 1 large egg
- 2-1/4 cups flour
- 1/4 tsp. salt
- 1 tsp. baking powder
Directions:
- Beat butter, sugar and vanilla until fluffy
- Add egg and beat well
- Combine flour, salt and baking powder, add to butter mixture, beating until just blended
- Divide dough into two portions and flatten into disks. Wrap each one with wax paper and refrigerate till chilled at least an hour
- Working with just one disk at a time, roll out on a floured surface and use cutter shape (be sure to keep cookie cutter floured)
- Bake at 375 8-9 minutes, cool on a wire rack
Icing Ingredients:
- 2 cups confectioners sugar
- 2 drops food coloring
- 1/2 tsp.mint extract
- 1/2 tsp. vanilla
- 1 TB. softened butter
- start out with 1/4 cup milk and add as needed
