A Toast to Summer

A Peachy Wrap-Up 
Peachy Slush
Cook's Notes: My apologies for the incorrect link posted yesterday for Peachy Slush. It has been corrected and the recipe follows below.  It's a  great refreshing summertime drink to have on hand. It keeps well in the freezer in a covered plastic container. The recipe needs to be made two days in advance before serving to freeze the alcohol. I added the peach puree to enhance the flavor.  
INGREDIENTS:
  • 1/4 cup sugar
  • 2 cups water
  • 12 oz. can frozen orange juice concentrate, thawed
  • 12 oz can. frozen lemonade concentrate. thawed
  • 3 cups water
  • 2-1/2 cups peach flavored schnapps
  • 1/3 cup lemon juice
  • 3  sliced peaches=pureed in a blender
  • Diet 7-Up

DIRECTIONS:
  • In a medium saucepan boil sugar and 2 cups of water for 3 minutes.   
  • In a large plastic container combine boiled sugar mixture, 2 concentrates, 3 cups of water, peach schnapps and lemon juice. Stir in peach puree and blend well. Cover and freeze. Before serving let container stand at room, temperature 15 minutes.   
  • To serve scoop out slushy mixture into a glass and fill with some Diet 7-UP.

Peach Margarita
Cook's notes:This fresh peach margarita recipe is sweet, simple to make, and so satisfying!
Recipe makes 1 serving but with 2 large peaches I was able to make 3 drinks.
Recipe comes from gimmesomeoven.com and a perfect drink for a hot summer day.
Ingredients:

  • 1/3 cup fresh peach puree (*see instructions below*)
  • 2 oz. silver tequila
  • 1.5 oz lime juice
  • 1 oz. Triple Sec 
  • 1 oz. orange juice
  • 1 TB. agave or honey
  • optional garish: rim salt and fresh peach slice
Directions:
  • Add all ingredients together in a shaker. Shake for 15 seconds until combined. Serve over ice in a glass that has been rimmed with salt and garnished with a fresh peach slice.
  • *To make fresh peach puree, simply peel and pit a fresh peach and puree it in a blender until smooth. 1 medium peach = approximately 1/2 cup puree (but measure to be sure).
Oh, and don't forget to add a paper umbrella.
