FYI- Foxie Roxie's vacation has ended with a return trip to the cities. I imagine she'll make another appearance Labor Day weekend. But we sure enjoyed her daily creative attire. Foxie Roxie went out with a bang with this showstopping outfit!

Tex-Mex Tinga
Cook's Notes:"Migas" is the Spanish word for "crumbs," and in Spain it's a dish typically comprised of stale bread and other ingredients. In Texas, migas are made with tortillas or corn chips, scrambled eggs, and, in true Tex-Mex fashion plenty of cheese. It's nothing fancy just great, hearty comfort food for breakfast or really any time.
The recipe below is only meant as a guide. To the basic combination of eggs, and cheese, customize according to taste and what you have on hand. You can add onions, salsa tomatoes,avocado, chili peppers, sausage etc.
Use either flour or corn tortilla. For this recipe I used both flour and corn tortillas and filling is enough for four-6 inch tortillas.

Ingredients:
- 1 TB. butter
- 6 large eggs
- 1/4 cup milk(not skim)
- 1/4 tsp. each oregano, paprika, cumin, chili powder and dash red pepper flakes
- 1/2 cup sweet onion, diced
- 1/2 cup mini sweet peppers , diced
- 1 cup cooked sausage, diced
- 1 cup white cheddar cheese, grated
- 1 cup cherry tomatoes, diced and patted dry on a paper towel
- 4 corn or flour tortillas
- Garnish options: salsa, avocado, sour cream, crumbled tortilla chips
- In a blender add eggs, milk and spices. Mix well.
- In a large fry pan melt butter and scramble egg mixture until slightly set. Fold in onions, peppers, sausage and tomatoes. Cook until eggs are set, add in grated cheese last.
- Divide mixture between tortillas. Garnish and fold to serve.

Oh, how I love Colorado peaches. A local church sells crates as a youth fundraiser. I missed out this year.
