Recipe adapted from Southern Living January/February 2021 and serves 2. It can can easily be increased using ratio 1 teaspoon heavy cream per ramekin.
Italian Baked Eggs with Herbs and Parmesan Cheese
Ingredients:

- Butter
- 2 teaspoons heavy whipping cream
- 4 large eggs
- Salt and Pepper to taste
- Fresh thyme and rosemary or 1 teaspoon each rosemary and thyme or 1-1/2 teaspoon dried Italian seasoning
- Finely grated Parmesan cheese
Directions:
- Preheat oven to 375 degrees and butter 2 (6 oz.) ramekins. Place ramekins on a baking sheet.
- Pour 1 teaspoon heavy cream into each ramekin. Crack two egs over cream.
- Sprinkle each with salt and pepper to taste.
- Bake until set round the edges but still a bit jiggly in centers, about 14 minutes.
- If only making one egg per ramekin bake for 12 minutes.
- Remove from oven let stand for 2 minutes. Garnish with herbs and cheese.One baked egg shown in photo
