National Pizza Day

 

February 9th

Pepperoni Pizza Bites
Cook's Notes: Snack food and the next best thing to pizza. Dunk each piece into marinara or pizza sauce. YUM!YUM!
As a timesaver look for frozen pizza dough to thaw.

Check out an alternative idea below recipe.
Ingredients: 
  • 1 pound pizza dough store bought or hommade.
  • Mozzarella cheese shredded (about 1 cup)
  • Pepperoni slices
  • 6 tablespoons butter
  • 3 cloves garlic minced
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • Pinch of salt
  • 4 tablespoons grated Parmesan Romano cheese
  • Pizza sauce or marinara sauce
Directions:
  • Preheat oven to 400 degrees and grease a 9-inch round pie pan with cooking spray, set aside.
  • On a lightly floured surface, roll the pizza dough out into a large rectangle. Use a pizza cutter or sharp knife to cut the pizza dough into 12 equal rectangles. Place about 2 teaspoons of shredded mozzarella cheese on each rectangle. Top with 3 pepperoni pieces.
  • Carefully take the ends of the rectangles and roll them up around the toppings, pinching the ends to make a ball. Place the balls in the prepared pie pan, seam side down. 
  • In a small saucepan, melt the butter and cook the garlic for 1-2 minutes over medium-low heat. Remove from heat and stir in dried basil, oregano, parsley, and a pinch of salt. Brush the pizza rolls with the garlic butter, reserving half of the mixture for later.
  • Bake for 20 minutes or until the tops are golden. Remove pan from oven and brush with more garlic butter. Sprinkle rolls with Parmesan cheese.
  • Serve the pizza rolls warm with pizza sauce or marinara sauce.
Alternative Idea
Use string cheese instead of shredded mozzarella for filling. 
Freeze cheese sticks one hour. Cut each stick into 3rds. On each pizza square place 2 pieces of pepperoni. On top place cheese cube. Shape dough around the cheese and pepperoni. Place seam side down in pan. Proceed with recipe as in orginal directions. 


Maggie Lena Walker made history when she became the first woman to own a bank in 1903. On top of that, she was a Black woman. The St. Luke Penny Savings Bank became a catalyst for economic advancement in the Black community.

    1. about 12 x 12 but a bit hard to give exact measurements as each piece of dough rolls out differently
      they were good and next go around trying the chese stick idea posted a little less messy that grated cheese

  2. Thank you for the Black History Month pieces. I was especially interested in Maggie Lena Walker. I'm currently reading The Book of Gutsy Women by Hillary and Chelsea Clinton. Maggie would have been a good person to be part of that book as what she did was definitely ground breaking.
