Brown Rice Pilaf

A Healthy Side


Brown Rice Pilaf
adapted from a recipe in People June 3, 2013
This dish goes well with grilled kabobs, meats and seafood 
Ingredients:
  • 1 TB. olive oil
  • 1/2 cup vidalia or yellow onion chopped finely
  • 1 package of Good Sense Dried Fruit Mix Fruit Nibbler (banana chips,raisins, pineapple,apricots,cranberries,apples) this product is found in the produce section
  • 1 can Swansons Chicken Broth low sodium plus 3/4 cup water
  • 1 TB. butter
  • 1 cup brown rice, rinsed and drained


Directions:  
  • Saute onions in olive oil till translucent about 3 minutes
  • Add in  brown rice and stir 2 minutes
  • Add in package of Good Sense dried fruit mixture
  • Grease a 8 inch glass square baking dish
  • Pour rice mixture into baking dish
  • Place chicken broth and water in the same pan as used for the rice mixture 
  • Heat to water and broth to boiling and pour over rice mixture in glass baking dish 
  • Cover dish tightly with foil and bake for 60 minutes 
  • Check for doneness but may need 15 minutes more and then let sit for 10 minutes covered with foil before serving
