Mother's Day Brunch

We often take for granted the very things that most deserve our gratitude. 
to all the moms 
Enjoy some Ever Ready Specials-perfect for the day! 
Blueberry Banana Pancakes
Cook's Notes: Recipe adapted from Taste of Home and make 6-8 large pancakes .  
Cooking Tip: Use a griddle to cook these pancakes as the heat is more evenly distributed than a fry pan. 
Ingredients:
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 large egg, room temperature, lightly beaten
  • 1-1/4 cups 2% milk
  • 1 large banana, mashed
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (do not thaw out frozen blueberries) 
  • Optional: Maple syrup and sliced bananas or blueberries over the top
Directions:
  • In a large bowl, combine the flours, sugar, baking powder, cinnamon and salt. In another bowl combine the egg, milk, mashed banana and vanilla; stir into dry ingredients just until moistened. Carefully fold in blueberries.
  • Pour batter by 1/3 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown. If desired, serve with syrup and sliced bananas.

Mixed Greens with Apples and Toasted Pecans Drizzled with a Maple Cider 
Vinaigrette 
Cook’s notes: Maple Cider Vinaigrette is enough for 4-5 salads.
Salad Ingredients:

  • Mixed greens about 6-8 cups (I used a combination of baby spinach leaves and chopped Romaine)
  • 1 large Granny Smith apple and 1 Honeycrisp apple, diced
  • 1 small red onion, thinly sliced
  • 1-1/2 cups halved red seedless grapes
  • 1 cup candied pecans or toasted pecans
  • Optional: ½ cup crumbled blue or feta cheese
Salad Dressing Ingredients:
  • 3 TB. apple cider vinegar
  • ¼ cup pure maple syrup
  • 1 tsp. apple pie spice mix
  • 1 tsp. Dijon mustard
  • 1 large garlic clove, minced
  • Salt and pepper to taste
  • ½ cup Extra Virgin Olive Oil
Salad Directions:
  • Mix greens with apples, grapes, onions and pecans.
Dressing Directions:
  • In blender add all ingredients and gradually add in olive oil. Mix well, cover and refrigerate until needed.

  1. Now if only I can wrangle the husband into preparing one of these delicious sounding recipes. That said, he makes brunch every Sunday. An omelet for me with a side of hash browns and fresh fruit. I am blessed.
