Friday Lunch Special Tuna Wrap

FRIDAY
TUNA WRAPS 
A healthy and delicious lunch that will satisfy you right through the afternoon. I loved the crunch, flavor and several textures that elevated this sandwich to a whole new level.  Several tweaks were made to lower the calorie count. I used plain Greek yogurt instead of mayonaise, a multigrain wrap instead of bread, a healthier brand of chips and a tuna product with less oil. I fully intended to add a diced avocado to make wrap even better, unfortuntely the avocado was not quite ripe when I took this photo. Next time though:) Recipe makes 2 wraps
Products used to make the wrap featured.  The chips were from Costco. 


  

Tuna Wraps
Ingredients:
  • 1 package Albaacore White Tuna
  • 2 Flatout Multigrain Wraps
  • 1/3 cup Greek plain yogurt
  • 1 teaspoon Dijon mustard
  • 1/ 3 cup each diced celery and mini sweet red peppers
  • 1 diced avocado 
  • 1/3 cup chopped walnuts 
  • 2-3 tablespoons diced red onion
  • 1 teaspoon dried parsley
  • Pinch of each Himalayan salt, freshly ground black pepper and red pepper flakes 
  • A handful of fresh torn baby spinach leaves, stems removed
Directions:
  • In a large bowl mix yogurt, mustard, celery, peppers, avocado, walnuts, red onions, parsley, pepper, salt and red pepper flakes.
  • Refrigerate mixture one hour.
  • Divide spinach torn leaves between 2 wraps. Place spinach leaves in center of wrap. Divide tuna mixture between 2 wraps.
  • Roll the each wrap the short way and tuck in ends. Slice and serve.
