Warm Up With Cookies

Crisp Oatmeal Cookies
recipe adapted from allrecipes.com
makes 3 dozen
Ingredients:
  • 1/2 cup softened butter
  • 1/2 cup softened margarine
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1-1/2 cups rolled oats (not quick cooking)
  • 1 cup flaked coconut
  • 1 cup miniature chocolate chips
  • 3/4 cup chopped nuts
Directions:
  • Preheat oven to 375-very lightly grease cookie sheet
  • In a large bowl cream margarine, butter and both sugars
  • Beat in eggs and vanilla till well blended
  • In another bowl add flour, oats, baking powder, baking soda, salt and coconut
  • Add to creamed mixture and fold in chips and nuts 
  • Place bowl in freezer to chill for an hour
  • Roll dough in 1 inch balls and place two inches apart on sheet
  • Return dough to refrigerator to keep chilled till next batch is made 
  • Check at 11 minutes

Here is a picture of "my new guy". He spends a lot of time looking out at all the leaves falling from the trees and basking in the sun's rays. But I'm wondering who is going to help me rake the multitude of fallen leaves??
