A Wee Bit of Green

May you have warm words on a cold evening, a full moon on a dark night, and a smooth road all the way to your door.
Irish Toast  

Rolling out some foods the next couple days with a wee bit of green in them
Reuben Pinwheels
recipe adapted from Taste of Home magazine 
This recipe is similar to Roast Beef Pinwheels posted February 24, 2013
Use flour tortillas or spinach wraps to bring in a wee bit of green  
Make two logs without sauerkraut in case some guests do not care for it 
Ingredients:
  • 1-8 oz cream cheese softened
  • 2-3 TB. spicy brown mustard
  • 1/4 tsp. prepared horseradish sauce
  • 1 tsp. dill weed
  • 1/2- 3/4 lb. thinly sliced corned beef (use a good quality brand like Boars Head)
  • about 15 thin slices of Swiss cheese
  • 1 small can sauerkraut, drained and squeezed dry with a paper towel
  • 5 flour tortillas or spinach flavor wrap 
Directions:
  • Mix cream cheese, mustard, dill and horseradish sauce 
  • Divide mixture to spread on each flour tortilla or wrap 
  • Layer in this order: corned beef, Swiss cheese and sauerkraut
  • Roll each tortilla, wrap tightly with plastic wrap and refrigerate
  • Right before serving cut each rolled log into fourths  

Pistachio Twists
recipe adapted from Allrecipes.com
Ingredients:
  • 1 package of puff pastry (2 sheets)
  • 1 egg white
  • 2/3 cup finely chopped pistachios shelled (use a Cuisinart or blender)
  • Kosher salt
  • 1/2 cup grated Parmesan cheese
Directions:
  • Preheat oven to 350 and line cookie sheet with parchment paper
  • On a floured wax paper surface work with one sheet at a time and keep other one covered
  • Beat egg white with a whisk
  • Brush one side of pastry sheet with egg white 
  • Sprinkle sheet with Parmesan cheese, Kosher salt and press in pistachios
  • Flip sheet over and repeat above process
  • Cut pastry into 3 inch long strips and twist once 
  • Bake 12-15 minutes
