Magic Cake


For each petal on the shamrock.
This brings a wish your way
Good health, good luck, and happiness
For today and every day.

The chemistry involved in baking sometimes eludes me. I am sure if I could consult with Alton Brown (Food Network Star The Science Guy) he would be able to solve this baking mystery. The church ladies gave me a cake recipe which I have titled Magic Cake. They said all I needed to do was follow the instructions carefully, bake in a jelly roll pan, don't frost the cake and bring cake to the church dinner show on Sunday. Now here's the mystery; there are only three ingredients in this recipe:cake mix, pie filling and 4 large eggs. I shook my head not quite understanding how this could possibly work. 
But it all came together perfectly even though I did cheat and sprinkled in some magic leprechaun dust right before the pan went in the oven for good luck.
Magic Cake-Lemon Bars
Cook's note: Be creative use any flavor cake mix combined with any pie filling flavoring and variety of cake toppings. Make sure cake mixture is level in jelly roll pan for even baking
Ingredients:
  • 1 box of lemon cake mix
  • 1 can Wilderness Lemon Pie Filling
  • 4 large eggs
Directions:
  • Mix cake mix and pie filling together
  • Beat 4 eggs lightly in a separate bowl and stir into cake mixture
  • Pour into greased jelly roll pan
  • Bake @ 350 for 20 minutes-test with toothpick
  • Sprinkle with powdered sugar or frost using your favorite frosting
Hard to believe this really worked. Now consider all the possibilities with this super easy cake recipe that even a wee little one could put together.
