Macadamia Nut Crusted Mahi Mahi


Macadamia Nut Crusted Mahi Mahi
Ingredients:
  • 1-1/2 cups macadamia nuts
  • 1 cup panko crumbs (Japanese style bread crumbs)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  •  4 TB. melted butter
  • 4 Mahi Mahi fillets
  • 1/3 cup flour
  • 2 tsp. water
  • 1 TB. dried parsley flakes
Directions:
  • Place bread crumbs, nuts, salt, pepper, parsley flakes in food processor
  • Cover and pulse till nuts firmly chopped-set aside in a bowl
  • Whisk egg and water and set aside
  • Place flour in a separate bowl
  • Coat fillets in flour, dip in egg mixture and then in crumb mixture
  • Melt butter and fry 3-4 minutes on each side to brown 
  • Place fillets on paper towels
  • Two ways to cook: Bake in oven at 375 on a lightly greased foil lined cookie sheet or grill on a lightly greased piece of foil
  • Serve with a twist of lime and sweet and sour sauce 
Sweet and Sour Sauce
Ingredients:
  • 1/2 cup brown sugar 
  • 2 TB. soy sauce
  • 1-1/2 TB. cornstarch
  • 1/2 cup white vinegar
  • 1-1/2 cups pineapple or orange juice
Directions:
  • In a saucepan mix cornstarch with juice-blend
  • Add in sugar, soy sauce and vinegar
  • Cook on low heat till thick
  • Serve on the side with a combination of white and brown rice
A side note: macadamia nuts seem to included in many Hawaiian dishes and are plentiful here
