Sunday Supper Spanish Omelette

Spanish Omelette or Tortilla with a Few Twists


A Spanish omelette or Spanish tortilla is a traditional dish from Spain and one of the signature dishes in Spanish cuisine. It's an omelette made with eggs, potatoes and onions. It is often served at room temperature as a tapa or at any meal.

The tortilla is sliced like a piece of cake. The main difference between a tortilla and a frittata is in how the eggs are finished. Both preparations begin with the eggs and filling, cooked stovetop in a frying pan. But whereas the frittata is finished in the oven, Spanish tortillas are flipped and finished on the stovetop.

Cook's Notes: I started out with the best of intentions to stay on track and follow the basic recipe. But then I went off the rails with a few additions to amp up the flavor. Mastering flipping the omelette was the best part. A little advance planning makes assembly go so much smoother. Early in the day or even the night before cook the meat, chop and bag peppers and onions. Recipe serves 4-6.
Cooking Tip: Use a non-stick pan for best results.

Ingredients:

  • 1-1/2 tablespoons olive oil
  • 1-1/2 cups diced potatoes,(smaller the better) use Yukon Gold
  • 1/3 cup sweet onion diced
  • 1/3 cup sweet red pepper, diced
  • Salt and pepper to taste
  • 1 cup Italian sausage, cooked and crumbled
  • 1/2 cup mixed cheeses
  • 1/2 teaspoon parsley flakes
  •  1/4 teaspoon each rosemary and thyme 
  • 6 large eggs
  • 3 tablespoons milk or cream
  • Optional chopped fresh chives
Directions:
  • In a blender mix eggs, milk or cream and spices, set aside. 
  • Heat oil in a non-stick fry pan. Stir fry potatoes with salt and pepper, onions and peppers 12 minutes or until potatoes are cooked. 
  • Add in cooked meat and cheese. Pour egg mixture into the skillet over the potato mixture and reduce heat to low. Use a spatula to even out the surface. 
  • Cover with a lid and cook for 3-4 minutes or until edges and center are set.
  • Loosen the edges with a spatula. Place a large dinner plate over the omelette and use your hand to carefully hold the plate against the omelette and in one swift motion, flip the omelette (holding on to pan handles) over onto the plate and back into the skillet. Cook for another minute or two.
