Hail Caesar

In March I posted this Caesar Salad appetizer recipe below. It features all your favorite Caesar Salad ingredients on toasted baguette slices.

Now it's time to give Caesar another nod with Chicken Caesar Pasta Salad.
It's a salad with a twist ready in 20 minutes guaranteed to be a family favorite. The ingredients can be increased depending on the amount of servings needed. Bowtie pasta can be substituted for mostaccioli. Grilled chicken can be prepared ahead and chilled. Chill salad ahead without romaine to avoid wilting. Add romaine just before serving. 

Note: Due to deer sneaking into our yard under the cover of darkness my ENTIRE tomato crop from 5 healthy plants was eaten. What a blow so hard to accept!! No tomatoes when photo was taken.

Ingredients:
  • Grilled chicken breasts, sliced on diagonal, cooled
  • 5 slices of bacon, cooked and crumbled
  • Cooked pasta, drained
  • 1 bag of Romaine lettuce
  • Diced tomatoes 
  • Thinly sliced cucmbers
  • Grated Parmesan cheese
  • Croutons
  • Salt and pepper to taste
  • Lite Caesar salad dressing
Directions:
  • Mix chicken, pasta, tomatoes, cucumbers, Parmesan cheese, cooked bacon and dressing.  Salt and pepper to taste. 
  • Chill 2-3 hours. Add in romaine and more dressing if needed. Serve  immediately.

Stand and Stuff Taco Shells
Caesar Salad Kit
Grilled chicken slices
Cucumber slices
Directions:
  • Heat shells for only 3 minutes, let cool a few minutes before stuffing.
  • Mix amount of ingredients needed in a bowl adding in dressing. Stuff shells and grate Parmesan cheese over top, add crumbled croutons on top and serve.
Last, but not least this tree. Now I realize I live far north but really can this possibly happen on August 12th??
