Prickly Pear Fruit
Prickly pears are the fruit of the prickly pear cactus.. These tasty, oval fruits sprout from the tops of prickly cactus leaves and range in color from yellow-green to deep red or purple. Grown on sun-drenched deserts and watered naturally by our generous monsoon rains, the succulent Prickly Pear Cactus fruit produces a rich, fruity flavor with distinct clarity, and a delicate aroma.
These neon fruits provide delicious juice that tastes like a cross between all-natural bubblegum (if indeed there is such a thing) and watermelon. Prickly pear juice is often used to make jam or candy, but works wonders in cocktails and used in vinaigrettes for salads. I purchased a Prickly Pear Vinaigrette and it was delicous.

Prickly pears are not only a diet staple but also a medicinal treatment for swelling and rheumatism among many indigenous peoples of the southwestern United States and Mexico. Whether eaten raw or dried, these prickly little fruits provide your body with several health benefits. I couldn't resist purchasing a jar of Prickly Pear Cactus Jelly. It does have a flavor that can't quite be defined.

When my friend from Nevada assured me I would find making this jelly quite labor intensive, I sprang for this purchase.

Cooking News-Michelle Obama is launching a Netflix children’s food show with a pair of puppets “to bring a bit of light and laughter to homes around the world.”

The new show, called “Waffles + Mochi,” launches March 16 and will be “all about good food: discovering it, cooking it, and of course, eating it,” the former first lady posted on Instagram on Tuesday. The 20-minute episodes will combine live action and puppets, and Obama will be a series regular.

The show centers on two best puppet friends who dream of becoming chefs and travel across the world looking for ingredients and making dishes “alongside renowned chefs, home cooks, kids and celebrities,” according to a press release from the show.


Fannie Lou Hamer, Social Activist, 1917-1977
A talented and charismatic speaker, Hamer endured threats and violence for her part in helping people register to vote in the 1960s. At the 1964 Democratic Convention, Hamer spoke about the brutal conditions Blacks faced while trying to vote in Mississippi. Her televised testimony was so riveting that President Lyndon Johnson forced the networks to break away by calling a last-minute news conference. Johnson was afraid Hamer’s eloquence would alienate Southern Democrats who supported segregation.

February is American Heart Month. The annual celebration began in 1963 to encourage Americans to join the battle against heart disease. A presidential proclamation pays tribute each year to researchers, physicians, public health professionals and volunteers for their tireless efforts in preventing, treating and researching heart disease, which is the leading cause of death for both men and women in the U.S.
Nearly one in four people who die each year die from heart disease. High blood pressure, high LDL cholesterol, and smoking are the leading risk factors, and one out of two Americans has at least one of these.
