Balsamic Parmesan Roasted Asparagus and Tomatoes
Cook's Notes: A healthy flavorful side to brighten up your meal. 
Ingredients:
  • 1 lb. asparagus, woody stems removed 
  • 1 cup cherry tomatoes, halved
  • 1 -1/2 tsp. olive oil
  • Salt and pepper to taste 
  • 1 cup Parmesan cheese, grated, divided
  • 1/3 cup dark balsamic vinegar 
  • Optional; fresh basil
Directions:
  • Line a baking sheet with parchment paper or silicone pad and preheat oven 400 degrees.
  • In a bowl toss asparagus and tomatoes with olive oil, salt and pepper
  • Place on baking sheet in a single layer. 
  • Sprinkle with half of the cheese. Roast for 15 minutes, mixing halfway through.
  • On the stove simmer the balsamic vinegar until it starts to thicken about 10 minutes or until it coats the back of the spoon.  
  • Drizzle over asparagus right before serving. Add rest of grated cheese.

Cook's Notes
The perfect way to celebrate Saint Patrick's day with kids - these Homemade Lucky Charms Treats are a great snack kids can make and perfect for school parties! These fun Lucky Charms treats are no-bake, take just a few simple ingredients, and look party perfect!
I recommend using a nonstick pan for easier cleanup. The wide shape of a wok makes a really easy pan to quickly stir in the cereal into marshmallows and transfer to the glass dish.

Ingredients you need:

  • 5 cups mini marshmallows 
  • 4 TB. butter 
  • 6 cups of Lucky Charms 

Directions:
  • Lightly butter a 9 x 9 pan. In a large non-stick saucepan or wok melt butter over low heat. Add marshmallows and stir occasionally until completely melted. Remove from heat. 
  • Add cereal and quickly stir until cereal well coated. 
  • Pour and press into a glass pan and evenly distribute. Cool for about 30 minutes. Cut into squares. Best if served the same day.
