Cook's Notes: A healthy flavorful side to brighten up your meal.
Ingredients:
- 1 lb. asparagus, woody stems removed
- 1 cup cherry tomatoes, halved
- 1 -1/2 tsp. olive oil
- Salt and pepper to taste
- 1 cup Parmesan cheese, grated, divided
- 1/3 cup dark balsamic vinegar
- Optional; fresh basil
- Line a baking sheet with parchment paper or silicone pad and preheat oven 400 degrees.
- In a bowl toss asparagus and tomatoes with olive oil, salt and pepper
- Place on baking sheet in a single layer.
- Sprinkle with half of the cheese. Roast for 15 minutes, mixing halfway through.
- On the stove simmer the balsamic vinegar until it starts to thicken about 10 minutes or until it coats the back of the spoon.
- Drizzle over asparagus right before serving. Add rest of grated cheese.
