Lemon Thyme Muffins with Gruyere Cheese
Cook's Notes: A moist muffin bursting with lemon and a hint of thyme. These muffins have a different texture than your standard muffins with the addition of cornmeal and almond flour. Savory perfect muffins paired with your favorite stew, chili or soups. Gruyere cheese is optional but works well in this recipe.

Ingredients:
- 1 cup all purpose flour
- 1/2 cup almond meal
- 1- 1/2 tsp. baking powder
- 1/2 cup yellow cornmeal
- 1/4 tsp. salt
- 2 springs of fresh thyme, leaves removed or 1 tsp. dried thyme
- 1/2 cup granulated sugar
- 3 TB. lemon zest
- 4 TB. lemon juice
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 tsp. almond extract
- Optional: 3/4-1 cup grated Gruyere cheese
Directions:
- Preheat oven to 350 degrees and line a 12-cup muffin tin with paper liners.
- In a medium bowl, combine the flour, almond meal, baking powder, cornmeal, salt and fresh or dried thyme.
- In a large bowl, combine the sugar, lemon zest, lemon juice, eggs, vegetable oil, buttermilk and almond extract.
- Add the dry ingredients to the wet ingredients and stir just until moistened. Do not over mix.
- Fill each muffin cup 2/3 full and sprinkle with sugar, if using. Bake 18 minutes, until top springs back when gently touched.
