Vegetarian Brunch Enchilada Style

A great start to your Monday with a vegetarian breakfast casserole enchilada style  from Pillsbury. Customize it to your tastes. Consider adding this yummy smoked apple sage vegan sausage to your egg flour tortilla with diced tomatoes. Serve fresh pieces of sliced avocado as a side. Pump up the Tex-Mex flavor, add in cumin spice, black beans and corn. My daughter is vegetarian and created this wonderful brunch meal. So easy!
