Taco Nachos
Cook's Notes: Can't go wrong with this snack. Prep ingredients beforehand, even the day before works, pop in the oven and serve right from the pan. Your favorite Mexican ingredients topped with cheesy goodness also stands in for a great game day food.
Ingredients:
- 1 lb. ground beef
- 1 TB. each from a package of dry taco seasoning mix and ranch salad dressing mix
- 1 can refried beans
- 1/2 can black beans, rinsed and patted dry
- 1 cup red and yellow mini sweet peppers, diced
- 1 cup tomatoes ( red and yellow) halved and patted dry on a paper towel
- 6 cups from a package of Mexican Four Cheeses
- 2 large avocados, seeded and diced
- 1 cup green onions, sliced
- 1 bag of tortilla chips (9-13 oz.)
- Optional 1 cup sliced fresh Jalapeno Chile Peppers
- Salsa
- Line a rimmed baking sheet with parchment paper or a silicone pad.
- Preheat oven to 375 degrees.
- Brown hamburger with dry seasoning ingredients and 1/3 cup water. Crumble meat and set aside.
- In a small pan heat on low refried beans.
- Spread chips on prepared pan and drop spoonfuls of refried beans on chips.
- Scatter black beans over the chips.
- Spread evenly over chips peppers and green onions. Top with grated cheese. Bake about 15 minutes.
- Top nachos with tomatoes, avocados and serve with salsa.
