If don't want to make a full St. Patrick's Day feast, just put the best parts on a stick. Think of it as a deconstructed meal. Serve deli-sliced corned beef, cubes of Irish cheddar, cabbage and roasted baby potatoes on a skewer. Serve with your favorite mustard for dipping. The idea can be taken to another level for a fun kid's meal on stick. Substitute corned beef with another deli meat or chicken chunks, cheddar or Swiss cheese, grape tomato and a mini roasted potato.
