Mother Nature did not get the word today as it's the first day of spring AND parts of Minnesota had snow.
While the world is engulfed in chaos with directives changing by the hour, I offer you a few bright spots. The desert is just emerging from a winter sleep with pops of color starting to surface. We've had more rain than usual so should be good for cactus blooms. These photos were taken in the yard.
Cook's Notes: Last night's grocery store run was a sobering experience. I feel like I am in war time with bare shelves and signs rationing certain items. I was appalled looking at entire shelves top to bottom empty. Hardest hit shelves were soups, rice, pasta, tomato sauces, meats and breads. It's a crazy time! And the hoarding just gives away to shortages-my, oh my!
To keep the focus on recipes with hopefully available ingredients for you and/or in your pantry and refrigerator/freezer, I came up with some Ever Ready recipes previously posted. Moving ahead future emphasis will be on vegetarian main dishes with meat options added in. On a brighter note, I did feel fresh produce area seemed pretty good.
