Weekend Round-Up

A Sunday well spent brings a week's content
Puffed Oven-Baked Pancakes with Fruit
Cook's Notes: I am working my way  through this great publication from BHG available at the grocery store for a limited time.
Puffed Oven-Baked Pancakes  recipe comes from the Power Up Breakfast Section. It's a cross between a popover and pancake. They rise quite high (And I was ready to take a photo but do deflate quite quickly)
Kids will love watching them rise through the oven glass door. The preparation is so easy they can make them too. These puffed pancakes should be served immediately out of the oven.   
The recipe calls for adding fruit in the center but I also added  just a little drizzle of pure maple syrup when I served them. Use whatever mixed fruits you have on hand. 
Recipe makes 6 and was adapted slightly. 
Ingredients:
  • 3 eggs slightly beaten
  • 6 TB. flour
  • 6 TB. skim or 2 % milk
  • 1 TB. sugar
  • Dash salt 
  • 1/8 tsp. Saigon cinnamon 
  • Optional toppings: fresh mixed fruits, drizzle maple syrup or a dollop of yogurt
Directions:
  • Preheat oven to 400 degrees. Generously spray with PAM a 6 cup standard size muffin tin.
  • In a small bowl combine eggs, flour, milk, sugar, salt and cinnamon.
  • Whisk until smooth and divide batter evenly between 6 muffin wells. I uses about 1/3 cup batter for each one. 
  • Bake 15-18 minutes or until pancakes are puffed and golden. Alert: they will deflate quickly when taken out of the oven. 
  • Remove from pancakes from pan,top with fresh fruit and a drizzle of syrup if desired. A dusting of powdered sugar would make them look even fancier. 
  • 90 calories per pancake, added fruit will raise the caloric level.  
December Part One
This book is a definite 5 stars, thumbs up YA novel that certainly can be enjoyed be all age groups. I was given the book to critique for Multicultural Children's Book Book Day January 25th. where a more in depth review will be posted. 
I absolutely loved this book from start to finish. The author, Elissa Brent Weissman has crafted a well written novel of two stories, one from the present and another from the past, using characters that you will feel like you know personally. Along the way there are important stories and lessons that can be learned, with different points of views on adoption and family histories. Love, sacrifice, strength, courage, history, and legacy are noteworthy elements of the story.


Twelve-year-old Imani, who is adopted and Jewish, helps her family mourn the loss of her Great Grandmother Anna; someone she barely knew. But as the family sorts through the elderly woman's items, Imani discovers a dusty and forgotten diary stuffed in the stacks of books. As she reads the diary, the world of Nazi-occupied Luxembourg unfolds as Kirsch family struggles with which of their seven children should they smuggle to America to be safe.But Anna and her twin sister Belle are inseparable. In a cruel and unexpected twist, only Anna is sent with the smuggler. A real page turner as young Imani sets into flurry of research to find out all she can about her family's history while also raising questions about her own birth parents and ancestry.
